Dill Aquavit

Dill is tricky to work with in distilling, as it very easily leans into green and minty aromas. We get around this by using copious amounts of caraway in our dill expressions as well, and we combine these with spices usually used in gin. We age our dill aquavit in American oak barrels previously used for bourbon.

Light straw colour. Mint, dill, anise drops, caraway and citrus on the nose, with pepper and vanilla towards the back. Soft and rich on the palate with caraway, dill, mint, and lemon peel. Long and quite floral finish with anise and cinnamon.

Organic wheat spirit, caraway, dill, anise, fennel, cinnamon, angelica, citrus peel, orris, fireweed, and nori.
